The classic flavours of Italy
The flavours of Italy are an amalgamation of spices and ingredients that are entwined in the rich tapestry of Italian history. These flavours have been carried through to the contemporary culinary scene and blended with modern tastes and cooking sensibilities, but we don’t forget where they came from.
From Roma comes the use of lamb and goat meat; vegetables such as artichokes; and cheeses like Pecorino and ricotta. Famous sweet dishes that originated from Rome include gelato, homemade candies and pastries.
We have injected these flavours into our dishes: our Rigatoni Amatriciana pasta with Napoli sauce, thinly sliced guanciale, Pecorino Romano cheese and fresh basil, and our Capricciosa wood-fired pizza with San Marzano tomato, mozzarella, ham, artichokes, Kalamata olives, Parmesan and fresh basil.
From Napoli comes pasta dishes (classically spaghetti, linguine and gnocchi) with vegetables (tomatoes, peppers and aubergine), cheeses (most notably ricotta and mozzarella) and seafood (fish, mollusks and crustaceans).
